I've been feeling rather homesick of late and rather than mope about....I'd thought I'd get pro-active about alleviating those pangs. So to that end, I made chicken curry. My mom makes the most awesome chicken curry known to me (isn't that always the case for everyone?)...and she has never given me the recipe to it...but that's okay...I've learnt to make my own and perhaps one day I'll reverse engineer the recipe for myself. The curry featured today however wasn't from my own recipe but using a spice mix provided by the A1 brand (its the only one I'll use in a pinch) blended together with my own mix of ingredients to give it the extra oomph.
I'm quite pleased that all the people who've eaten it liked it alot.
On the other hand...it didn't really accomplish its original purpose...but at least, I suppose, it wasn't for want of trying.
As a side note, I'd just like to add that the cast iron pot I got really lends itself well to making curries...delicious melt off the bone tenderness, wonderful development of the flavours in the rempah...I could go on and on =)
